Ingredients
Small brinjals | 6 |
Chilli powder | 1 ½ tsp |
Garlic | 2 pods |
Onion | 1 (chopped) |
Coconut | 1 tbsp |
Cumin | ½ tsp |
Tamarind | Small lemon size |
Coriander powder | 3 tsp |
Turmeric powder | ¼ tsp |
Pepper | ½ tsp |
Salt, curry leaves, oil |
Method
- Cut brinjals into 4. (Don’t make 4 pieces).
- In a bowl, mix chilli powder, coriander powder, turmeric powder and salt. Add water and make a paste.
- Stuff this paste into the brinjals. Let it marinate for ½ an hour.
- Grind coconut, cumin, garlic and pepper finely.
- Heat oil in a pan, shallow fry the brinjals and keep aside.
- In the same pan, add seasoning and add tamarind pulp. Boil it.
- Add all masalas with salt. If any left over marinade we can add them too. Let it boil.
- Now add ground masala. Cook well.
- Add fried brinjals. Reduce the flame and cook till the desired consistency.
- Add curry leaves and add jaggery.
