Ingredients
4 eggs
1 ¼ cups sugar
¾ cup oil
2 ¼ cups flour
1 tbsp. baking powder
¾ cup orange juice
1 cup walnuts
1/4cup chopped candied orange peel
2 tbsp. Cocoa powder
2 tbsp. all spice
Glace and Décor
1 ¼ cup powdered sugar
1 pinch all spice
2 tbsp. rum
32 walnut halves
2 tbsp. chopped candied orange peel.
Method
Preheat oven to 400 F. Chop walnuts for the batter. Beat eggs and sugar until light and creamy. Add oil and juice. Stir in walnuts, orange peel and flour mixed with baking powder, cocoa powder and all spice.
Pour batter into prepared pan. Bake in bottom rack of the oven for 40 - 45 minutes. Let it cool.
Sift together powdered sugar and all spice and stir in rum drop by drop to make a smooth and glaze. Spread glaze on cake, then decorate with walnut halves and sprinkle orange peel.
