Ingredients
1 cup rice flour
1 cup jaggery
1 cup mashed banana
¼ teaspoon cardamom powder
3 teaspoon roasted coconut
1/8 teaspoon baking soda
¼ teaspoon salt
4 tablespoons coconut milk (optional)
½ teaspoon sesame seeds
Method
Ø Heat jaggery by adding little water, melt it, strain and keep aside.
Ø In a mixing bowl, mix all the ingredients except coconut and sesame seeds. Make it a thick batter. Can use hand mixer. Finally add sesame seeds and coconut. Rest it for at least 45 minutes.
Ø Heat the unniappam pan and fill oil in each impressions upto ¾ th. When the oil is hot, reduce the heat to medium and fill with batter up to little more than ¾ th.
Ø Allow it to cook slowly until done. When one side is done, flip over to the other side and cook.
Ø Cook till both sides are golden brown.
