Ingredients
1 cup raw rice
1 tablespoon urad dal
¼ teaspoon fenugreek seeds
½ cup cooked rice
½ cup coconut
2 teaspoon sugar
¼ teaspoon baking soda
Salt to taste
Method
Ø Wash and soak rice, urad dal and fenugreek for at least 6 hours.
Ø Grind with cooked rice, coconut and sugar. While mixing add salt and baking soda. Ferment this batter for 8 hours.
Ø Heat appam pan or deep dosa pan in medium heat. Take a ladleful of batter, pour in the center of the pan and rotate once or twice to coat the side of the pan. Cover and cook for 2 to 3 minutes.
Ø Once the appam is completely cooked, remove it from the pan. Do not flip like dosa.
