Ingredients
5 boiled eggs) sliced)
2 potatoes (sliced)
1 drumstick
5 green chillies
¾ teaspoon cumin
7 shallots (sliced)
¼ teaspoon turmeric powder
1 tablespoon curd
4 tablespoons coconut milk
Curry leaves
Salt
3 teaspoons Coconut oil
Method
Ø Cut drumstick int0 2 inch pieces and slit them. Grind green chillies, cumin with 2 tablespoons of coconut milk.
Ø In a pan, add sliced potatoes, drumstick, turmeric powder, sliced shallots, ground mixture, water and salt. Mix everything together. Cover and cook.
Ø Once the vegetables are getting cooked, add coconut milk, egg, curd. Mix well.
Ø Heat oil in another small pan, add mustard, urad dal and curry leaves. Once popped pour this seasoning into egg mixture.
Ø Serve hot with rice.
