Cauliflower-capsicum fry

This is another variation of cauliflower and it is easy one. I prepared within 15 minutes. I used the ready-made chilli chicken masala powder to get the flavor. Try this and drop your comments!



Ingredients
½ cauliflower cut into florets
1 capsicum
1 medium sized onion
1” ginger finely chopped
5 garlic cloves finely chopped
1 tsp chilli chicken powder
1 tsp. pepper powder
Salt to taste
Oil
Curry leaves, cilantro for garnish

Method
Ø  Cut the onion and capsicum into cubes.
Ø  Put the cauliflower florets in hot water for 10 minutes.
Ø  Heat oil in a pan, add ginger and garlic. Once it is turning into brown add onion. Sauté till translucent.
Ø  Add chilli chicken masala powder and stir for few minutes.
Ø  Then add capsicum and stir it for a minute, add cauliflower and salt. Mix well with the masala is well coated and till done.
Ø  Once done, sprinkle pepper powder, mix it for 2 minutes.
Ø  Finally, add curry leaves and cilantro.

Cashew Macaroon

This is the famous sweet in Tuticorin.  I tried twice. I got the right taste at the second time only. But the shape was not exactly cone. It was like cone. The taste was good. So, try and let me know!!!

Ingredients
4 eggs
¾ cup powdered sugar
1 cup powdered cashew

Method
Ø  Preheat the oven to 205 F.
Ø  Separate egg whites from the egg. Beat or whisk the egg white until soft peak form.
Ø  Add sugar little by little and whisk continuously until stiff peaks form.
Ø  Now add cashew powder and fold gently.
Ø  Transfer batter to a pastry bag.  Pipe cones shape 1 inch apart on parchment-lined baking sheets.
Ø  Bake for 50 minutes to 1 hour. Rest in the oven for another half an hour for crispiness.

Oats Manchurian

Ingredients

2 cups oats
½ cup shredded carrots
½ cup shredded cabbage
½ cup beans
½ cup shredded cucumber
1 big onion (cut ½ into small pieces and remaining into cubes)
5 green chillies
¼ cup grated coconut
2 capsicums (red and green or your choice)
1 tsp. minced garlic
1 tsp. minced ginger
1 tsp. soya sauce
1 tsp. tomato ketchup
2 tsp chilli garlic sauce
2 tsp. tomato sauce
½ tsp. mustard
½ tsp. urad dal
½ tsp. channa dal
Salt to taste
Oil
Cilantro, curry leaves

Method

Ø  Dry roast oats. Cool and make a powder.
Ø  Heat oil in a pan, add mustard, urad dal, channa dal and curry leaves.
Ø  Add ½ onion (small pieces) and green chillies, sauté till translucent.
Ø  Now, add beans and mix till half done. Then add carrot, cabbage and cucumber and salt.
Ø  Once everything cooked well add coconut and switch off the flame.
Ø  In this mixture, add oats powder and sprinkle some water and mix well. Make small balls. Steam cook.
Ø  Heat oil in another pan, add ginger and garlic. Sauté.
Ø  Add onion fry them. Then add capsicums. Sauté them. Do not overcook. It should be crunchy.
Ø  Now add all sauces, fry for a minute. Then add the balls, mix it thoroughly.
Ø  Garnish with cilantro.
